Beetroot Halwa

Ingredients:

Beetroot                -  500 gms
Milk                      -  1/2 ltrs.
Sugar                    -  150 gms
Ghee                     -  2 table spoons
Cashew nuts          -  1 table spoon
Raisins                   -  1 table spoon
Cardamom powder-  1/2 tea spoon

1.  Peel and grate beetroots.
2.  Boil milk reduce it to half.
3.  Take the beetroot in a thick bottomed vessel and add the the reduced milk to the grated beetroots.
4.  Keep the stove in low flame and let the beetroot cook in the milk till soft.
5.  By the time beetroot cooks the milk will also dry further.
6.  Add sugar and allow it to cook further.
7.  All the time the stove should be in low flame, and the sugar will melt and halwa should become dry.
8.  Heat ghee in a kadai and add broken cashew, raisins and cardamom powder.
9.  Once the cashews become golden brown add it to the halwa and mix thoroughly.
10.Serve hot or chilled and it tastes terrific.
